L-Methionine iserves as a chelating agent for heavy metals, as a flavoring agent and nutritional supplement for foods. It acts as a feed additive, vegetable oil enrichment and as a single cell protein. In addition to this, it is used as a hepatoprotectant and also acts as a lipotropic agent and prevents excess fat buildup in the liver.

Applications
La L-méthionine est utilisée en tant qu’acide aminé essentiel pour le développement humain et comme antidote en cas d’empoisonnement à l’acétaminophène. Elle sert d’agent chélateur pour les métaux lourds, d’agent aromatisant et de supplément nutritionnel pour les aliments. Elle agit comme additif alimentaire, sert à l’enrichissement de l’huile végétale et comme protéine à cellule unique. En outre, elle a un rôle hépatoprotecteur mais aussi d’agent lipotropique et prévient l’accumulation excessive de graisse dans le foie.

Solubilité
Soluble dans l’eau et le chlorhydrate. Légèrement soluble dans l’acide acétique. Insoluble dans l’éthanol, le benzène, l’acétone et l’éther.
